APRIL  ARTICLE

Spring is such a special time of awakening, new life, new beginnings.  What do you do for spring? 
I usually start with a spring cleaning in my body first with maybe a juice fast, anywhere from 3-7 days, this year I am doing a 10 day with a fabulous movement called Cleanse America. I like to do a juice fast 4 times a year, with each of the seasons. It gives our bodies an opportunity to release toxins from the environment, or stress and it also gives our bodies a chance to rejuvenate each organ down to the cellular level.

Next I go through my house, and the things that don't serve me, fit me, or I haven't used in the past year, go bye-bye. Donations of clothes and houseware go to the Homeless Shelters.  It gives me an added opportunity to donate some time as well.

It is also a great time to plant some goodies, no matter how small a place you have. If you listen to my show from 4-5-12 Marie-Claire and I give you tons of tips on having fresh grown food in your place no matter where you live. One of my favorites is using a canvas shoe holder that usually goes over your door, and plant sprouts, herbs, and tiny lettuce, and carrots.  One caution, please make sure you are getting good seeds, not genetically engineered ones.

Spring brings us beautiful landscapes, flowers, and seeds of life are all around us.  Take a moment and notice the changes, celebrate them and enjoy them!!




RECIPES OF THE MONTH

ORIENTAL EXPRESS
1/4 head red cabbage
1/4 head napa cabbage
2 carrots
1 parsnip
1/2 yellow onion
1/4 cup tahini
1/4 cup sesame oil
1/4 cup water
Juice of 1/2 lemon
2 cloves garlic
Slice the cabbages into long slices like a noodle. Use the peeler to peel the carrots into a bowl.
Repeat procedure with the parsnip so each of the slices are peels and look like pasta. Add
cabbages. Slice onion into long thin slices, add to bowl. In a blender mix tahini, sesame oil,
water, lemon and garlic, and blend till well mixed. Add to bowl of veggies and stir well. For a bit  more depth,
 and flavor add some pineapple bits.

ASIAN PEAR SALAD
Dressing
3 tbsp lemon juice
1 tbsp rice wine vinegar
1 tbsp raw agave
2 tbsp olive oil
1/4 tsp sea salt
1/2 cup flat parsley leaves chopped up
1//2 cup mung bean sprouts
2 green onions sliced thin
1 stalk of celery sliced small
2 asian pears cored and sliced
Mix ingredients for dressings first in a bowl with a whisk , then add all other ingredients and
mix together.
Crisp and light and refreshing!!
